Indulge in contemporary cuisine inspired by the sea. Created using the finest seasonal ingredients from around the world, savour fine gastronomy at The Cliff.

New on the menu is Asparagus Puree which features sautéed asparagus tips, morel mushrooms,  “sous vide” egg yolk, caramelised onion and asparagus puree with truffle froth, Poached in Earl Grey tea, Foie Gras is served with a refreshing salad of compressed Asian pear, slow-roast beetroot, baby carrot confit and thin-sliced red radish, drizzled with pear-favoured duck jus. Hokkaido Scallop is beautifully presented with baby pea vines, endive, sweet green peas, shaved truffles and black truffle oil, served with a veloute of sun chokes by the table.

Not to be missed is the Sauteed John Dory from New Zealand.  Wrapped with Spanish iberico ham and oven-roasted, the succulent fish is perfected with a puree of piquillo peppers, zucchini-basil compote and battered fried brocolinni. Taking on a modern interpretation, A Study in Kurobuta Pork features bacon-wrapped rib eye, crisp roulade of pork shoulder confit and cider-braised pork belly, fennel “risotto” and poached apple in white wine and tarragon.

Our new desserts, Macaroon a la Rose with rose petal cream, lychee and raspberry sorbet, raspberry espuma and Texture of Passion Fruit prepared five-way – crisp, soft mascarpone mousse, frozen sorbet and liquid “bubble”, are divine delights, to redefine the sweet finish.
